>Pumpkin Pie


Today is a day that shall go down in history. At least in the Hall family.

Yes ladies and gentlemen, I successfully baked a pumpkin pie, from scratch. It was quite the process, especially since I had no idea what I was doing.

As you may or may not know, Husby works night shifts, and being that I was already an insomniac he and I have adapted fairly well to his unusual schedule. So this morning as I was streaming season 2 of Dexter on my laptop, I suddenly got the urge to bake. Granted it was one in the morning, but who cares? I eyed the two pie pumpkins that Husby had previously brought home for me and thought “Today is the day.”

I gathered the recipe my Father Dear had googled and printed out for me, rolled up my sleeves, pinned back my bangs and went to it. First thing on the list was to clean out the pumpkins.

I actually threw the seeds in a ziploc bag and tossed them in the fridge for later. Anyone know a good pumpkin seed recipe? Please share!

The next step was to boil the pumpkins. Easy!

While those were cooking it was time to make the pie crust. Another first for me.

I cut in the vegetable shortening,

mixed in the rest of the ingredients, made a ball, and rolled it out.

I had some dough left over so figured it would be a great time to try out the mini cookie cutter set I got from Wilton a while back.

Then after I mashed the heck out of my cooked and cooled pumpkins, I mixed in the rest of the ingredients, poured them into the pie pan, and placed my tiny dough hearts on top.

I admit, I could have arranged them nicer, but whatever, I liked it!

When the timer went off and I pulled my masterpiece out of the oven I felt amazingly accomplished. Sure I over cooked the outside crust a little too much, but gosh darn it, I made a pumpkin pie from scratch!

I think the mini hearts were my favorite part.

And we did!

That’s right. I did it. And it tasted good. *pats self on back*

I also made a loaf of rustic Italian bread, from scratch, but that’s a post for another day. Its almost noon here, time for bed. Haha.
